Aside from cooking for my vegetarian hubby, I make it a point also that I eat a healthy balance diet and so I have always integrate a healthy cooking in my kitchen. As much as possible I disregard fatty foods and that I prepare to cook them in the oven instead of frying them in deep oils. Or I have this george foreman grill that all the fats are disregarded during the cooking. In this way I can help and hoping that my body away from incurable diseases.

It takes time and a bit of effort to go vegetarian. No, it’s not easy and no, it’s not always going to result in losing weight (I’ve gained, but then again, I still like my sweets!). I had to retrain myself on how to cook and now I have to think about things like protein. Before, just a slab of meat on a plate and some potatoes and a veggie and the meal was complete. But I do feel much better.
I love that you’re trying to cook for your husband. I can recommend Vegetarian Times (they have some pretty easy recipes and ones that require odd ingredients, but for the most part the food is phenomenal). Also, I bought Veganomicon cookbook. Great stuff in there, and also in 1,001 Low-fat Vegetarian Recipes by Sue Spitler.
