Chicory Salad Recipe

Chicory are in season and so I made a salad that the recipe I found on internet.
Here’s the recipe:

Ingredients:

2 large navel oranges
180g carrots; peeled, grated or pared into long strips
10 green olives, stoned and quartered
1 head chicory, trimmed
2 tbsp lightly-toasted pine nuts ( I used roasted peanuts)
generous pinch of cinnamon
2 tbsp lemon juice
5 tbsp orange juice
1 tbsp clear honey
2 tsp orange flower water
1/2 tsp ground cinnamon

Peel the oranges, removing as much of the bitter pith as possible then slice horizontally into very thin rounds. Place in a bowl, cover, and chill. Add the carrots and olives to a bowl and set aside. Meanwhile mix the lemon juice, orange juice, honey, orange flower water and 1/2 tsp ground cinnamon together in a bowl. Whisk to combine, until well blended.

Pour all but 2 tbsp of th dressing over the carrots and olives and toss to combine. Arrange the orange slices around the edges of a round palate then pull the chicory leaves apart and place them on the plate, just inside the orange slices. Scatter the carrot and olive mixture over the top then garnish with the nuts and cinnamon. Dribble the remaining dressing over the top and serve.

Cream of Broccoli Soup

Ingredients

* 2 tablespoons butter
* 1 onion, chopped
* 1 garlic clove, chopped
* 1 stalk celery, chopped
* (14 1/2 ounce) vegetable broth
* 4 cups broccoli
* 3 tablespoons butter
* 3 tablespoons flour
* 1/2 cup milk
* pepper
* 1/2 cup cheese
Procedure:
Melt 2 tablespoons butter in medium sized stock pot, and sauté onion, garlic and celery until tender. Add broccoli and broth; cover and simmer for 10 minutes.Purée soup or mash with potato masher.Return to heat.In small saucepan, over medium heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, add to soup. Add cheese; stir until melted. Season with pepper and serve.

I have this old laptop which i think it can be still useful. I asked my cousin which is a computer expert to check on it. He advised me to to buy memory module. And so yesterday he came here at my place to work on the old laptop since it was also his free day. To my amazed my old laptop works again and I dont need to buy a new one. What a great saving I have!
